Frozen Friday Pizza Night

"Now normally I absolutely enjoy cooking us dinner, but tonight I just wasn't feeling it. Sooooo.. I decided to pop a yummy frozen pizza in the oven. We had a Sicilian pizza with Canadian bacon, peppers and sausage pepperoni.  I accidentally, had the oven turned up to high and quickly grabbed it from the oven two minutes before the timer went off.  Luckily, it tasted just right.......crispy on the edges.  Yum. Yum.  Along with the pizza we had a fresh English cucumber salad with tomato and crunchy seasoned croutons.  It was delish too! Lastly, I can't forget to mention that I enjoyed a nice cold can of beer. Beer and pizza just seem to go together, know what I mean?"

Chicken Fajita Night


"Tonight I enjoyed two Chicken Fajitas with a Chipotle Lime Sauce on a Corn Tortilla with a yogurt cheese dipping sauce and a side of leftover cheesy mashed potatoes."  



Ingredients and Quick Rundown on Method
Extra Virgin Olive Oil - Used to Heat the Pan
Green Pepper and Onion - Sliced and Heated Till Tender
Fresh Organic Chicken - Sliced into Cubes and Heated till Light Brown and Cooked Completely
Frontera Classic Fajita Skillet Sauce With Lime and Chipotle - Mixed in with cooked chicken, green pepper and onion. Served on a Maria and Ricardo Corn Tortilla that was warmed in the oven at 350 degrees for 5 minutes. (Make sure they are fresh, mine was a little old and didn't taste as good as normal) Topped with a mixture of greek yogurt, the fajita sauce and cheddar cheese.  The side was simply some cheesy mashed potatoes that we had the night before.  It's always good to use up those leftovers! Overall a good meal!
