"Last week I made this Spinach and Chicken Quiche. I was a little nervous how it was going to turn out as I had never made a quiche with chicken in it before and usually the recipe calls for more than just two eggs. It actually tasted really good and heated up fine as a leftover the next day for lunch. I made the crust from scratch, but you could use a frozen crust if you are short on time. In addition, I did use a reduced fat olive oil mayo even though the recipes suggest to use regular mayo. It didn't make a difference to me and I was willing to save the extra calories."
